This dish is a fusion of North Indian tadka (tempering of spices) and the classic egg fry. It brings together the earthiness of Indian spices and the richness of fried eggs to create a comforting, hearty, and utterly satisfying meal. Whether you’re cooking for a quick dinner or adding variety to your brunch menu, this recipe hits the spot every single time.

What is Egg Tadka Egg Fry?

Egg Tadka Egg Fry is a simple yet flavorful dish made by frying boiled eggs and then tossing them in a spicy *tadka*- based masala. It’s different from your usual scrambled or curry-style eggs — here, the eggs are given a crispy golden exterior and then coated in a sizzling onion-tomato masala seasoned with spices like cumin, turmeric, garam masala, and chili powder.

The beauty of this dish lies in its flexibility. You can serve it with roti, paratha, or rice, or enjoy it on its own as a protein-rich snack.

Ingredients:

Here’s what you’ll need:

 For the Egg Fry:

– 4 boiled eggs (peeled and halved)

– 1 tbsp oil (for frying)

– ¼ tsp turmeric powder

– A pinch of salt

– ½ tsp red chili powder

 For the Tadka Masala:

– 2 tbsp oil

– 1 tsp cumin seeds

– 1 medium onion (finely chopped)

– 1 green chili (slit)

– 1 tsp ginger-garlic paste

– 1 large tomato (finely chopped)

– ½ tsp turmeric powder

– ½ tsp red chili powder

– 1 tsp coriander powder

– ½ tsp garam masala

– Salt to taste

– Fresh coriander leaves for garnish

Instructions:

Step 1: Fry the Boiled Eggs

– Heat 1 tablespoon of oil in a pan.

– Sprinkle turmeric, red chili powder, and a pinch of salt over the boiled eggs.

– Add the eggs to the hot oil and fry them on medium flame till they turn golden brown and slightly crispy on the outside.

– Remove and set aside.

Step 2: Prepare the Tadka Masala

– In the same pan (or a new one), heat 2 tablespoons of oil.

– Add cumin seeds and let them splutter.

– Add chopped onions and sauté until golden brown.

– Toss in the green chili and ginger-garlic paste. Cook until the raw smell disappears.

– Now add the chopped tomatoes and cook until they turn soft and mushy.

– Add turmeric, red chili powder, coriander powder, and salt. Mix well and let the spices blend into the tomato-onion mix.

– Sprinkle a little water if the masala starts sticking to the pan.

– Cook on low heat until the oil starts separating from the masala — that’s when you know it’s ready.

Step 3: Combine and Finish

– Add the fried eggs to the masala. Gently toss them so they get coated with the spicy tadka mix.

– Sprinkle garam masala and give it a final stir.

– Garnish with fresh coriander leaves.

Serving Suggestions:

Egg Tadka Egg Fry is best enjoyed hot, straight out of the pan. Pair it with:

– Steamed basmati rice

– Roti or paratha

– Or even stuff it in a sandwich or wrap for a spicy egg roll!

Tips and Variations

– Want extra heat? Add some crushed black pepper or dry red chilies to the tadka.

– For a richer texture, stir in a spoonful of cream or butter at the end.

– You can also crack raw eggs directly into the masala for a semi-scrambled version.
