Ingredients:
For Preparation:
250g bhindi (okra), washed, dried, and chopped into 1-inch pieces
2 tablespoons oil (for shallow frying the bhindi)
For Masala:
2 tablespoons oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 tomatoes, finely chopped or pureed
1 teaspoon ginger-garlic paste
1 green chili, slit (optional)
½ teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
½ teaspoon garam masala
½ teaspoon dry mango powder (amchur)
Salt to taste
Fresh coriander leaves for garnishing
Instructions:
Step 1: Prepare the Bhindi
1. Wash the bhindi and pat them completely dry with a kitchen towel. This step prevents the bhindi from turning slimy.
2. Cut them into 1-inch pieces.
3. Heat 2 tablespoons of oil in a pan and sauté the bhindi on medium heat for 7-8 minutes until they turn slightly crispy. Remove and keep aside.
Step 2: Make the Masala Base
1. In the same pan, add 2 tablespoons of oil.
2. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until they turn golden brown.
4. Stir in the ginger-garlic paste and cook for a minute until the raw smell disappears.
5. Add chopped tomatoes and cook until they become soft and mushy.
Step 3: Add the Spices
1. Add turmeric powder, red chili powder, coriander powder, salt, and cook for 2-3 minutes until the masala releases oil.
2. Add the sautéed bhindi and mix well so it is coated with the masala.
3. Sprinkle garam masala and dry mango powder. Cook for another 2-3 minutes.
Step 4: Serve
Turn off the heat and garnish with fresh coriander leaves.
Serve hot with roti, paratha, or rice.

Tips For the Perfect Bhindi Masala:
- Always dry the bhindi completely before chopping to prevent sliminess.
- Avoid stirring too much while cooking to keep the bhindi intact.
- Using dry mango powder enhances the tangy taste, but you can substitute it with lemon juice.
