Ingredients You’ll Need

For the Koftas:

Paneer –1 cup (grated)

Boiled Potatoes  – 1 large (mashed)

Cornflour– 2 tbsp (for binding)

Green Chilies – 1 (finely chopped)

Garam Masala – ½ tsp

Salt – to taste

Cashews & Raisins – for stuffing (optional)

Oil – for frying  

 For the Gravy:  

Onions – 2 (finely chopped)

Tomatoes – 3 (pureed)

Garlic-Ginger Paste – 1 tsp

Cashews – 8-10 (soaked & blended)

Turmeric Powder – ½ tsp

Red Chili Powder – 1 tsp

Coriander Powder – 1 tsp

Garam Masala – ½ tsp

Fresh Cream – ¼ cup

Butter/Ghee – 2 tbsp

Kasuri Methi (Dried Fenugreek Leaves) – 1 tsp

Salt – to taste  

Step-by-Step Recipe:

Step 1: Making the Koftas

1. In a bowl, combine grated paneer, mashed potatoes, cornflour, green chilies, salt, and garam masala. Mix well to form a dough.

2. Take a small portion of the mixture, stuff a cashew or raisin in the center (optional), and roll it into a smooth ball.

3. Repeat for the rest of the mixture and keep aside.

4. Heat oil in a deep pan and fry the koftas until golden brown. Drain on paper towels.  

Step 2: Preparing the Gravy

1. Heat butter/ghee in a pan and sauté the onions until golden brown.

2. Add ginger-garlic paste and cook until the raw smell disappears.

3. Pour in the tomato puree and cook until the oil separates.

4. Add cashew paste, turmeric, red chili powder, coriander powder, and salt. Cook for 2 minutes.

5. Pour in a little water to adjust consistency and simmer for a few minutes.

6. Stir in fresh cream and crushed kasuri methi for a rich, aromatic finish.

Step 3: Assembling the Dish

1. Just before serving, gently place the koftas into the gravy and let them soak for a couple of minutes.

2. Garnish with fresh coriander and a drizzle of cream.
